Default AAAAW Come on now!!

Come on now. BBQ season is still upon us!! Give me some ideas!
If you have a favorite Herb lets here about it. I still have no consensus on "sauce or no sauce". Lavender? use it? mixed with what? I wished I 'Taste-O-vision', Did Beef short ribs with a Lavender rub this weekend. Might just do the Christmas Prime with it too, it was that good!
Lets here some of your stories.
Camping meals too.

I'm not a BBQ maker,I'm on the eater side, I like all sorts of BBQ (chicken, pork and beef are all good) I like the meat cooked with the spices and rubs, and as for the sauce i think it should go on just before the meat is done so the meat don't get dryed out, but on long enough to atatch to the meat and glaze??? I like the meat cooked till almost done with out the sauce because I like the flavors the spices and smoking give to it before the sauce .... and being from the St.Louis area I like a sauce with a sweet-n-smokey type of taste most of the time as that is the mainstay of the area, but I do go for the mustards and other types when I want to try some thing new and see what they bring to the taste...

Default It's that time again

Break out your grills and smokers. It's that time of year again. Actually it's always a good time to BBQ. The New Mexico State BBQ championship is at the end of this month. Keep your eyes open for a contest in your area. If you have never thought of BBQ being a competitive sport (Yes Sport) you really need to check one out. You can sample some of the best BBQ in the country at one of these events. So, Enjoy, I will keep you posted on our adventure this year.

Actaully we never seem to stop. We catered a wedding reception January 1 for 100. We also did a few other small events in Feb. In a week or so we are doing 3 breakfasts and 3 dinners for a group of RVers that drive the 'Big Rigs',The Prevost and converted bus folks. These are guys that drive the million dollar rigs, there should be about 50 of them here for the week. 5 days later we cook at the Pork and Brew BBQ Contest, take a Short Break and do a dinner theater for 300 poeple for 2 nights, Of course it will feature BBQ.

Here we go. The 7th annual Rio Rancho Pork and Brew BBQ contest, for me it begins this after noon.
We will be moving into our site this evening and will begin to cook for the judging school tomorrow morning at 4 AM. Things should wrap up around 6 PM on Saturday, then it all has to come back to the house and be put away.
The weather looks better this year than last. Should be in the low 60's and marginal winds. Last year it was in the low 40's and the wind, snow and rain kept people away. Should fair well this year and as always we will have a great time, possibly get and award or two (Hopeful thinking).. Wish us luck and we'll be back on Monday..

Well..... We are changing the name of the BBQ contest here in Rio Rancho to the Pork and 'Blow'.. Sustained winds all day on friday of 40 to 50 MPH caused damage and discouragement. The main judging tent (40' X 100') Blew down, We were set up about 15' from it and all we could do was watch. Any way, on a lighter note; we had our best overall finish at this contest, 21 out of 66, best finish on ribs and brisket here too.. over all very successful, cooked alot, learned alot, drank alot, made some new freinds and are looking forward to doing it again next year..
