Tri Tip the way my wife BBQ'S it. By the way I'm looking for a Chile receipe that does not have beans in it. I'm looking for flavor not hotness ( I can add heat later ). If you are in to smoking your meat (?) I like to smoke a nice rib roast salt is the key there.

Well, It's off to Durango, Co for the 4th. The Chamber has a big to do and a BBQ contest on Thursday and Friday. We will see if the "Sauced" meats are what the judges want this time. Wish us luck, I'll try to post pictures when we get back. (I am still partial to 'no sauce') BUT if I do use it, Black's Thick and Sticky BBQ Infusion is the only way to go.

Have fun and give em hell! I'll be laying Walnut flooring in the Queens Victorian as I have every holliday since Thanksgiving but I'm almost done....................come this Thanksgiving........................ I hope.

Back from Durango. Took 1st in Pork, 5th in Brisket, 6th in Beans, 10th in Ribs, 11th in Chicken, 6th over all. It was great.. Great turn out and good weather, mostly NM and Co teams competed. We ended up in Pagosa for the balance of the weekend doing alot of R&R, S&S (Rest and Relax, Sit and Stare) Ended up with TB (Tired Butt). It appears that the Ribs must be covered in sauce and the Brisket no sauce, The Pork Butt was Raspberry and Chipotle after a 20 hour smoke. Chicken well we still haven't figured it out yet but will keep trying.

Congrats on a job well done. How far is Pagosa from Durango? My son used to live in Durango love the ride from Ouray to Durango through Sliverton.

The small team was real proud of the finish. (Being the Boss I was very impressed).
Doing these contests with out selling gets pretty pricey, this one with 6 team members, 3 RV's, Meat and Libations ran about $3,000 for the trip. If you ever get to the area you need to go to the Bar-D chuck wagon for the dinner show, It's a must do, the BBQ is not bad either.

Lets try something new.
I am looking for a meat rub that possibly the Forum could call it's own. If we can come up with something that will fit most everyones taste I'll pass it around to the members only at cost. (Squid I still haven't forgot you, still working on the timing issue).
Here is what there is to work with in my world, easy to purchase and consistent in quality:
Medium Green Chile powder, Mild to 'burn a hole in your gut' Red Chile powder, Dark-rich Chipotle powder, Habanero powder, Green Jalapeno powder, Smoked Hungarian cherry peppers (Sort of a sweet mild Chipotle), Ancho Chile (strong flavored Green Chile), Smoked Paprika and of course Garlic, Onion, Black and White pepper, Parsley, Mexican Oregano, sugars and salts of what ever origin.
Here is what I had in mind:
Post a combination, add what ever your favorite herb or seasoning is and I will try to formulate it into a meat rub. By the way do tell what meat you think it would be good on, any will do.
I am looking forward to something new and exciting. The Mop/Bastes worked out real well from before.
